TAKIKOMI GOHAN


INGREDIENTS (for four people)
· 3 cups rice
· 100g chicken breasts
· 1 sheet abura-age (if possible)
· 1/2 carrot
· 1/2 gobo (if possible)
· 3 pieces dried mashrooms
· little green peas
· 1 can (200g) bamboo shoots

sauce
· 3 tbsps sake (or white wine)
· 3 tbsps soy sauce
· 1 tbsp mirin (sweetened rice wine or sake with sugar)
· 3 cups water
· 1/2 tsp salt

1. Wash rice and soak for 30 minutes.
2. Cut chicken into 1cm cubes.
3. Pour boiling water over thin abura-age to remove the excess oil. And cut it into 2cm lengths and into strips.
4. Soak dried mashrooms in water until it softens. Remove stems and cut into strips.
5. Cut carrot and bamboo shoots into thin strips of 2cm lengths.
6. Peel gobo and cut it in thin slivers and soak in water for 10 minutes.
7. Cook rice with water, indredients, and sauce.
8. Say "Itadaki masu."
