YAKITORI

INGREDIENTS for four people
·1kg (2 lbs) chicken thighs
·2 long onion (leek, green onion)
·16 bamboo skewers (or something very thin stick)
·2 tbsps oil
·shichimi togarashi (if possible) (six kinds of spices mixed with red powder pepper)

SAUCE-A-
·8 tbsps soy sauce
·5 tsps sugar
·6 tbsps mirin (or 6 tbsps white wine with 2 tbsps suger)
·2 tbsps sake (or 2 tbsps white wine)

1. Make the Yakitori sauce by boiling the ingredients until it becomes thick.
2. Cut chicken into bite-size pieces (2-3cm =1inch cubes) and sprinkle with salt and pepper.
3. Cut long onion into 3cm (=1½) length.
4. Skewer pieces of chicken and pieces of long onion alternately on wet skewers.
5. Preheat oven to 150°C (=300 F). Grill 4. in a greased baking pan until brown. Spread Yakitori sauce over chicken, and grill again to a brown color.
6. Before serving, spread the sauce over grilled chicken. If you like, eat with them shichimi togarashi.
7. Say "Itadaki masu."
